Headquartered at the foothills of the Great Smoky Mountains in Sevierville, TN, Collier Restaurant Group operates ten restaurant concepts with eighteen restaurant locations. Locally owned and operated by Lori Collier and Elise Collier Massey, we are a third-generation family business operating since 1968. Following the example set by our father Brent Collier, our long history of providing our guests with great food and great service can be seen daily in all of our locations in Tennessee and South Carolina. Our different restaurant brands offer something for everyone–from a hearty breakfast at Flapjack’s Pancake House to a fun or romantic fondue dinner at The Melting Pot. Additionally, we own and operate Camp RiversLanding, an RV park located in the heart of Pigeon Forge, close to where the Collier family has lived for years. As a family-operated business, we’ve invested over fifty years in our region and we look forward to another fifty as we continue to expand and grow with new concepts.
Elise’s favorite word is purpose! Everything she does for CRG and her family revolves around fulfilling a strong purpose. Elise has been involved in CRG for her entire life, having grown up literally inside one of the family’s original pancake houses. Elise is committed to creating a company that honors God and serves people. She is heavily involved in various community organizations, including United Way of Sevier County, Smoky Mountain Area Rescue Ministry, Sevierville Chamber of Commerce, Leadership Sevier (Class of 2014), Knoxville 40 Under 40, and many more. Elise loves the ribs at Corky’s!
Literally raised in the family restaurant, Lori is now involved in the finance and operations of CRG. When not at the office, you’ll find her volunteering with Leadership Sevier (Class of 2021) and with her son’s extracurricular activities. Lori graduated from the University of Tennessee with a degree in Human Resource Development. Having Lori diversed in many departments makes her our go-to person when people need help. She has also been awarded the messiest biscuit maker at Flapjacks Pancake Cabin. Her favorite brand is Quaker Steak and Lube, her favorite food is biscuits and gravy, and she loves to share good meals with her family.
Beau’s superpowers are organization and focus! His attention to detail is unparalleled, and he focuses heavily on creating a strong company and legacy that will continue to serve people for decades to come. In addition to his work at CRG, Beau is heavily involved in leadership with the Gatlinburg Chamber of Commerce and Visitors Bureau, Nucleus Knoxville, University of Tennessee Athletics, Cokesbury United Methodist Church, and Leadership Sevier Class of 2023. Beau would be hard-pressed to choose his favorite restaurant (it’s like choosing your favorite child, after all!) but he is very fond of Flapjacks, Smoky Mountain Pancake House, and Smoky’s Pancake Cabin!
Royce is a human calculator and is our own version of Google – we fully believe he knows everything! When he’s not in the office (which is rarely), he’s volunteering with the Leadership Sevier Class of 2022 and with Celebrate Recovery at First Baptist Church of Sevierville. In his leisure time, Royce can be found tending to his garden. His favorite dish at any of our restaurants is the salmon.
Raised in a restaurant family, Gina loves to spend time in the kitchen to create the perfect menus for our restaurants. She’s actively involved with Hospitality TN, Walters State Community College, 100 Women Who Care of Sevier County, ProStart TN (college competition), Smoky Mountain Area Rescue Ministries, and Sevierville Chamber of Commerce.
When she’s not in the kitchen, you’ll find her out driving and showing off her black Camaro. Her passion is traveling, and we fully believe she works so she can travel. While her favorite restaurant is currently Corky’s, we feel she’ll be moving her brand loyalty to Roma Table as soon as it opens in Fall 2023.
There is never a dull moment with Mary around. She always makes people feel welcome and never forgets to celebrate people. Mary started with the company in 1996 and she was one of four employees in the office. Some days she just has to laugh and refers to the office as the cartoon network. Mary has been a vital part of our Human Resource Department and focuses on employee benefits. She is a whiz when it comes to navigating the insurance world. She has been there for many ups and downs for people and her door is always open, eager to help others. Mary has a big heart for animals and often helps raise money or supplies for local shelters. She is a cancer warrior. Her favorite brand is Flapjacks Pancake Cabin and she absolutely loves their Flapjacks Fritters.
A man of few words, Robert is responsible for keeping all of the properties running smoothly.
He enjoys working with his hands, and will gladly help anyone with anything. As a former restaurant manager, Robert fully understands the needs of our teams and troubleshoots to ensure that we have the best systems possible. His favorite Collier brand is The Melting Pot.
Ruth takes care of our people! As the first person our team reaches out to with questions, Ruth is a fount of knowledge and truly loves all of our staff. A member of our Collier team for more than 15 years, Ruth is our go-to person for all things. She loves visiting our South Carolina locations, so there’s a pretty good chance that her favorite place might be Old Chicago Pizza!
Billy is our resident IT expert – he literally keeps all the wires connected for our home office and our locations. In addition to managing the nuts and bolts of the systems, he is also the keeper of our numbers and knowledge base. He is a member of the Leadership Tomorrow Class of 2024. In his spare time, he coaches basketball and baseball with the Pittman Center and loves working outside in his garden. He doesn’t like to choose favorites, and enjoys eating at all of our Collier restaurants!
